1 Minute Milk Chocolate Mug Cake {vegan, paleo}
A dessert that’s SUPER quick to make? Sign me up!
Ive been doing a lot of experimenting with quick and easy desserts and this one TOTALLY rocked my taste buds. Many of the 1-minute cakes can be loaded with sugar, eggs, and other things that make quick and easy assembly a little more difficult.
What I really love about this recipe is that you can make it on the fly, and it comes out great. What I didn’t do when making it, but that you could do, is add an ice cream or a topping on top to make it extra creamy. I just kept it the way it was- not creamy, just super rich and delicious.
For some extra chocolatey taste, add some chocolate chips or MORE cocoa powder. YUM!

1 Minute Milk Chocolate Cake Mug {vegan and paleo}
Ingredients
- 1/2 Tbsp almond butter, melted
- 1/2 Tbsp coconut oil, melted
- 2 Tbsp canned pumpkin
- 1 tsp vanilla extract with stevia
- 1 Tbsp almond milk
- 1 Tbsp coconut flour
- 1 tsp cocoa powder
- 1 Pinch baking powder
- 1/2 Tsp Apple cider vinegar
Instructions
- In a glass dish melt the coconut oil and almond butter- stir together
- Add the rest of the ingredients and mix until homogenous
- Pour the ingredients into a lightly greased ramekin
- Microwave the ramekin for 60-90 seconds - then allow to cool before eating
- Top with your favorite toppings and enjoy!
