Lymph-Loving, Adrenal-Supportive Carrot Salad
A crisp and colorful salad packed with antioxidants, healthy fats, and nutrients to support your lymphatic system and adrenal health.
When it’s hot out and your body is asking for something light, cooling, and nourishing, this summer carrot salad checks every box. It’s crisp, hydrating, full of fiber, and packed with nutrients that support your lymphatic system and adrenal health. Bonus? It comes together in just a few minutes and makes enough for the whole family or a few days of quick meals.
Carrots are rich in antioxidants and vitamin A, which help support the immune system and lymphatic drainage. Paired with healthy fats from olive oil and tahini, plus a little sweetness from maple syrup and a pop of freshness from mint, this salad is just as nourishing as it is delicious.
Why This Salad Supports Your Lymphatic System
The lymphatic system is your body’s internal drainage system, responsible for clearing out toxins, waste, and cellular debris. When it’s functioning well, you may notice improved energy, digestion, and skin clarity. But when it’s sluggish, you might feel bloated, fatigued, or more prone to illness.
This salad helps your lymph system in a few key ways:
- Carrots are rich in beta-carotene and other antioxidants that support immune and lymphatic health. Antioxidants protect cells from oxidative stress and inflammation, two factors that can slow down lymphatic flow.
- Olive oil and tahini provide healthy fats that help absorb fat-soluble vitamins (like A, D, E, and K), which play roles in immune function and detoxification.
- Pumpkin seeds are rich in zinc and magnesium, the key minerals that support energy, hormone balance, and adrenal resilience.
- Mint is cooling and calming, and traditionally used to soothe digestion, which is closely tied to lymphatic flow.
Tips & Variations
- Add hemp seeds or chickpeas for extra protein
- Mix in a handful of arugula or baby greens
- Use sunflower seeds instead of pumpkin seeds if needed
- Store in the fridge for up to 2 days (best fresh)
