5 Easy Marinade Recipes We Love
Hello grilling season!
I get a lot of requests from clients and friends for marinades to use on summer (and frankly, all seasons!) meats and veggies. So I whipped up a few recipes for you and your favorite people (or just yourself) to enjoy.
Though meats and fishes get a lot of attention for using a marinade on, I love to marinade veggies- because though I love my veggies plain and simple, I also love them with lots of flavor.
Below these 5 recipes, I have recipes you could try these marinades on, and hopefully you love them!
Italian Marinade
Ingredients
- 1/2 cup white wine
- 1/2 cup lemon juice
- 2 Tbsp olive oil
- 1 Tbsp minced onion
- 1 Tbsp minced garlic
- Pinch black peppercorn
- 1 Tbsp oregano (dried)
- 1 Tbsp basil (dried)
- 1 Tbsp thyme (dried)
- Pinch salt
- 1 Tbsp dried onion powder
Instructions
- Combine all ingredients in a small mixing bowl- and whisk together
- Use as a marinade for your veggies, or meat- marinade for at least 30-60 minutes for the most flavor
Simple Garlic Marinade
Ingredients
- 5 cloves garlic, crushed
- 1 tsp onion powder
- 1/2 cup olive oil
- Dash salt
- Dash pepper
Instructions
- Press garlic cloves with the side of a knife to crush slightly
- Remove papery skin and transfer to a re-sealed bag and remove as much air as you can
- Smash the garlic with the smooth side of a meat mallet until completely crushed
- Next open the bag, and add the oil, vinegar, herbs, salt and pepper
- Next to the bag, add in the poultry, meat, veggies etc
- Seal the bag shut - and marinade for 30-60 minutes (or more)
Cuban Mojo Marinade
Ingredients
- 3/4 cup extra virgin olive oil
- 1 Tbsp orange zest
- 1/4 cup fresh orange juice (squeeze)
- 1/2 cup fresh lime juice
- 1 cup cilantro, finely chopped
- 1/4 cup lightly packed mint leaves
- 6 cloves garlic, minced
- 1 1/2 Tbsps oregano, dried
- 3 Tbsp ground cumin
- pinch salt
- pinch pepper
Instructions
- In a bowl, combine all the ingredients and whisk together (you can also mix in a food processor until smoothly combined)
- Marinate your fave veggies, meat or anyting you like in there! (you can also use this as a dressing too)
Asian Teriyaki Marinade
Ingredients
- 1/2 cup coconut aminos
- 1/3 cup honey
- 2 Tbsp rice vinegar
- 2 Tbsp orange zest
- 1 clove garlic, minced
- 1 Tbsp ginger, dried and powdered
Instructions
- Combine all ingredients in a bowl (or blender) and blend thoroughly
- Use uncooked to marinade your favorite vegetables or protein; or add to a saucepan and heat for 2-3 minutes until warm and then serve as a sauce
Chimichurri Marinade
Ingredients
- 1/2 cup red wine vinegar
- pinch salt
- 4 cloves garlic, chopped
- 2 cups fresh cilantro
- 1 cup fresh parsley
- 2 Tbsp oregano (fresh or dried)
- pinch pepper
- 3/4 cup extra virgin olive oil
Instructions
- Combine the vinegar, salt, and garlic in a medium bowl and let stand aside for 5-10 minutes while you prepare the rest
Next, stir in the cilantro, parsley, and oregano.
- Next, whisk in the oil using a fork
- Marinade the meat or veggies and allow to sit for a number of hours to soak in all of the flavor
