Roasted Acorn Squash Soup
In these cold winter months, soups can be some of the best foods we can give to your bodies! I know it can feel like soups take hours to make and require a ton of different ingredients, but I keep things SO simple. I’m not someone that likes to spend hours in the kitchen, so quick and easy recipes are what I’m all about. This roasted acorn squash takes about 30 min to make and is absolutely delicious!! The perfect meal for lunch, dinner, or even a mid afternoon warming snack.

Roasted Acorn Squash Soup
Ingredients
- 1 onion, chopped
- 1 tbsp garlic, minced
- 1 clove garlic
- 1 cup roasted acorn squash
- 1/2 apple, chopped
- 1 tbsp olive oil
- 3 sprigs thyme
- 1 sage leaf
- 3/4 cup water
- 3/4 cup chicken broth (full salt)
- salt & pepper
Instructions
- Heat a stock pot over medium heat- add onion, garlic, squash, olive oil, apple. Sauté for 10 mins until contents are soft and warm.
- Add the herbs. Continue to sauté for 2-3 mins.
- Add liquid. Continue to cook on medium heat, until it’s visibly hot. Then simmer for 10-15 minutes.
- Blend or food process. It shouldn’t be super thin liquid, but should have a bit of texture.
- Serve and enjoy!
