25 Minute Shrimp Stir Fry

Quick and easy is the name of the game! And this easy 25 minute shrimp stir fry is both delicious and simple. I love to make quick stir fry dinners on busy nights because they can be loaded with nutrients and fiber, and can also be satisfying while making great leftovers (we LOVE leftovers!).

Try this easy shrimp stir fry, and try adding your favorite veggies and protein if you want to switch it up. You can also add some brown rice or mashed sweet potato under the stir fry to make it a heartier meal as well; however, for those of you on a low lectin plan or needing to be grain free, choose sweet potato instead. Additionally, be mindful of the type of teriyaki sauce you use, as some contain more soy and additives as well as salt too.

25 Minute Shrimp Stir Fry

Prep time: 10 minutes
Total time: 25 minutes
Makes: 2-3 portions

Ingredients:

  • 1 tsp coconut oil
  • 1 clove garlic
  • 2 dashes ginger powder
  • 3 carrots, peeled and chopped
  • 1 medium onion, chopped
  • 1 lb shrimp
  • 2 cups broccoli florets
On the side:
  • Teriyaki sauce (I like Whole Foods Organic brand!)

Directions:

1. Heat a medium pan over medium heat, then add coconut oil- continue to heat until it melts.
2. Add garlic, onion and carrots, allow to brown -5 minutes.
3. Next add the shrimp and cook for 10 minutes, then add broccoli.
4. Next add the ginger powder and continue to cook for about anothe  5 minutes or until veggies are soft.
5. Serve with your favorite stir fry sauce and enjoy!
