Fall Harvest Juice

 

Autumn seasonal produce is so delicious, flavorful and packed with healthful nutrients.

I love this juice because it’s a combination of seasonal root vegetables carrots and beet, as well as gorgeous seasonal collard greens. This juice isn’t colorful but it’s also loaded with antioxidants and health-promoting properties to help promote a strong and healthy immune system during cold and flu season. Additionally, this juice is also a good source of electrolytes that are key nutrients for hydration and muscle health, thanks to the celery, beet and carrots.

This juice makes for a great pre or post-workout beverage to replenish sodium and potassium lost through sweat.

Fall Harvest Juice

Prep time: 5 minutes

Total time: 5 minutes

Makes: 1 serving (16-20 oz, 500 mL)

Ingredients:

  • 1 beet (beetroot), washed and peeled
  • 1 pear
  • 5 carrots
  • 4 collard leaves
  • 3 celery stalks
  • 1-inch (2.5 cm) piece of ginger

Directions:

  1. Wash all produce well.
  2. Peel the beet.
  3. Add ingredients through the juicer and enjoy!
