Electrolyte Elixir Juice

This delicious juice did a great job refueling my sweaty morning spent at Soul Cycle here in New York City today. With the holidays coming (meaning lots of sweet and delicious treats), I’ve been on an super exercise kick to keep myself in shape- so I’ve been looking for great ways to re-hydrate. This juice is filled with local and in-season organic ingredients- beets, carrots, celery, apples, and ginger.

Why juice?

Beets, carrots and celery are chalk-full of electrolytes, which means they’re great at helping to move the fluid I’m drinking (water) into my muscles for proper hydration. In particular- beets are a good source of potassium and natural sodium, carrots of potassium, and celery of natural sodium– these vegetables are also chalk-full of other nutrients. For more electrolytes, you can add 8 oz coconut water through juicer at the end o the juicing process- it will also add more volume.

Ingredients:

3 beets, cut small enough to fit into juicer

5 large carrots

3 stalks celery

1 apple, core removed

1-inch ginger

(optional) 8 oz plain, unflavored coconut water

Directions:

1. Prepare and wash ingredients

2. Add produce through juicer (and coconut water if you choose)

3. Serve and enjoy!
