Easy Carrot Nachos

Easy Carrot NachosI love nachos… but usually nacho ingredients don’t like me so much!

So I made this easy peasy recipe just in time for the super bowl tomorrow night to help all you gluten, dairy, grain-free friends out there who are looking for some gametime nachos.

I’ve seen similar recipes made with sweet potatoes instead of carrots, and I’ve also seen this similar recipe made with grain free chips (I will do this exact same recipe with grain free chips too). Add your favorite toppings and voila you’re done!

Sweet Potato Toast

Sweet Potato Toast is a versatile recipe that is simple and full of nutritional benefits!
Servings: 2 to 3 per sweet potato

Ingredients

  • 1 sweet potato sliced into "toast" slices from end to end- about 1/2 inch thick each
  • 1+ toppings of your choice: almond butter, avocado, cinnamon etc

Instructions

  • Slice the sweet potato end to end in to slices (raw)
  • Place into the toaster or toaster oven on medium- you should do this about 2x or until the toast is toasted to your liking
  • Add your favorite topping - we love avocado smash, almond butter with cinnamon - or whatever you choose!
  • Eat and enjoy!
