We LOVE Sweet Potato Toast!

We LOVE sweet potato toast here and it makes an excellent accompaniment alongside any meal, and can be a stand alone snack as well. 

Sweet potato is loaded with nutrients like vitamin C, skin-healthy beta carotene, and colon cancer preventive ellagic acid. 

Sweet potato is so versatile we use it here in juices (yes, you can juice it raw!), chopped and roasted in salads, or alongside any protein of your choice.

Sweet Potato Toast

Sweet potato is so versatile, is a quick and easy recipe, is full of Vitamin C and nutrition!
Servings: 2 to 3 servings per sweet potato slice
Prep Time5 minutes

Ingredients

  • 1 sweet potato- sliced into “toast” slices from end to end- about 1/2 inch thick each
  • Toppings of your choice: almond butter avocado, cinnamon etc

Instructions

  • Slice the sweet potato end to end in to slices (raw)
  • Place into the toaster or toaster oven on medium- you should do this about 2x or until the toast is toasted to your liking.
  • Add your favorite topping – we love avocado smash, almond butter with cinnamon – or whatever you choose!
  • Eat and enjoy!
