Simple Greek Salad
I LOVE THIS SIMPLE, EASY SALAD!
I was looking for a very simple salad recipe to make with what I had on hand. That’s when I created this simple Greek salad. It’s made from 5 very common ingredients – chopped cucumber, halved cherry tomatoes, chopped celery, shredded carrots, and shredded Brussels sprouts.
Brussels sprouts have many health benefits and I love finding ways to use them in recipes. In addition to the fact that they’re DELICIOUS (and I know, not everyone feels the same way about the sprouts), Brussels sprouts are also good for you! They’re loaded with fiber and healthy nutrients like folate (mood-healthy), vitamin K, immune-boosting vitamin C, and anti-cancer sulfur-based nutrients that are also good for helping the liver to promote self-cleansing.
Top this simple Greek salad with a good quality olive oil, salt and pepper and it’s done! I love Loi Greek olive oil! It’s really important to change up your salad ingredients and the way your food looks to optimize satisfaction and pleasure. We often forget that we can get really bored from having the same thing all the time. So mix it up!
You can make this salad as intricate and exciting as you want it to be – namely you can add more veggies, a protein of your choice, and even some avocado. I just wanted it super easy, so super easy it is!

Simple Greek Salad
Ingredients
- 1 whole cucumber chopped
- 2 cups cherry tomatoes halved
- 4 stalks celery chopped
- 1/2 cup carrot shredded
- 1/2 cup Brussels sprouts shredded
- 2-3 Tbsp good quality olive oil
- salt
- pepper
Instructions
- Wash and prepare the veggies
- Mix together in a serving dish
- Drizzle with your delicious olive oil (we used Loi Greek Olive Oil here)
- Sprinkle with Salt and Pepper
- Serve and enjoy!
